Early in the morning and within the first two weeks of the new season's tea growth, around late March, the top two leaves and bud are carefully plucked from the bushes. The tea leaves still have the hairy down on them and when they are gently steamed and dried they come a superb green tea known as White Monkey Paw. It gained its name because the dry leaf appearance is said to resemble a monkey paw. It is a green tea but the infused liquor and visual appearance is so delicate it could almost be thought of as a white tea. Truly delicious!
