The freshly picked leaves for this Formosa Lapsang from Nantou County, Taiwan, are withered over pine and oak fires and then pan fired, each leaf rolled by hand before being pressed and covered by cloths in wooden barrels. After fermenting, the leaves are rolled again and hung in bamboo baskets over burning pine boughs to dry. The result is a flavour of smoky pine and oak fires, making it one of the world's finest teas.
